Iris stepped back to the hearth, where the brick oven warmed for the noon loaf; the rise in temperature, however gentle, pulled moisture from the cloth mantle covering the resting dough and tightened its skin.

They fed the culture a spoon of water, another of flour. The mixture thickened, then recoiled, as though gathering momentum for a delayed surge. Satisfied, Troy reached for the small earthen urn that held coarse salt, intent on seasoning the outer crust later, yet his touch paused; the dough, once smooth, now dimpled along its crest, signalling gasses building faster than their schedule allowed. What caught Iris’s eye was the twitch of the cloth as an air bubble escaped, lifting the edge and letting warmth leak away. She lowered her voice. “We shape now, or the starter eats all its food again.” The decision hung between their moving hands, neither quite committing.

Troy rolled the dough onto the floured bench; momentum carried it forward, stretching in slow oscillations before settling, glossy and elastic. Each score with the wooden pick released a gentle sigh, and the mantle of steam that followed curled past their aprons toward the chimney vent. Satisfied, both stepped aside while the round rested in its basket. Minutes slipped, then the ring inside the jar climbed, overtaking its earlier mark and casting the morning’s silence in new light — the trace had spoken of strength, not weakness. Later, the peel lay across the counter, a faint crust of flour scattered around the empty basket, and the jar’s renewed bubbles tapped softly against the glass.
