Troy’s wooden spoon thumped the side of the pot at every slow circle; the interaction between wood and thickening fruit left a muffled thud, a rhythm like a drum played under blankets. Steam sighed past his wrist, and an imaginative trail of shapes drifted upward, breaking apart with tiny snaps when cooler air met the vapour. A short vial of vanilla essence tapped against the metal tongs on the jar station, adding a sharp clink that cut through the wetter sounds.
Kay adjusted the flame, and the kettle replied with a softer roar. Troy slid a chilled plate from the freezer and held it near the stove, listening for the faint sizzle as two drops of jam struck its surface. Thirty breaths later, the dots still ran like thin paint—one partial gain, not enough. If the mixture keeps bubbling so loudly, he reasoned, water will leave faster and the next test may change. He stirred again; the spoon scraped, drawing a deeper tone as sugar crystals broke free. A second sample landed on the plate with a quieter slap, held shape for a count of twenty, then surrendered to gravity—closer, yet short of the mark. He breathed against the windowpane, noting how the pop-pops inside the kettle grew slower, thicker. One more pull through the ruby mass, one more scoop: the third drop landed with a dull plop, and silence followed. A light touch of his fingertip pushed the cooled surface and it wrinkled at once.
Kay lifted the heavy pot while Troy filled three jars, their glass sides ringing softly when set beside each other. The kettle’s roar faded to a distant hum, and sticky sweetness crackled on the cooling burner. Troy wiped the spoon clean against the rim and laid the long handle across the damp cloth beside the drip tray.
