A crumpled sheet of bubble wrap rested on the turning board, still cool from protecting a fresh wheel during delivery. Beyond the washing station stood a short side room that acted like a lock chamber. Its heavy oak door kept temperature steady whenever the outer entrance opened. Each tap on a mature wheel sent a dull thud rolling down the next vault, the space behaving as a gentle echo chamber. Fraser lifted the nearest marked wheel and carried it toward the stone basin, damp rind sticking slightly against his clean palms.
He set the wheel onto the basin rim, aiming to wash the stripe with fresh brine before it spread deeper. The spring water, normally a steady trickle, arrived as thin drops today, so the cloth gathered only a weak sheen of moisture. Rubbing the cloth across the rind barely shifted the powder; the stripe clung stubbornly, and salt crystals scratched against the firm surface. He paused, thumb resting on the gritty band, and tilted the wheel; a faint line of whey seeped from beneath the stripe. If he had kept scrubbing, the stripe would have lifted, but a layer of precious rind would have come away too. Instead, he turned the wheel slowly, noting that the band met each shelf groove perfectly; the mark came from pressure, not mold.
