Strawberry vapour stung Kit’s nostrils as he slid the chilled plate onto the windowsill, and the kettle gave a low hiss that merged with the steady tick of the gas. A paper parcel of sugar rustled on the prep counter where his grandmother read softly from a stained notebook, the silver locket at her neck tapping the spine with each word. Kit lifted a long spoon; every wet plop echoed against copper while tiny bubbles encapsulated pockets of steam and burst like muted firecrackers. He dropped a sample on the plate, waited through the faint drip-drip from the spoon handle, then tilted the plate. The drop glided rather than wrinkling, so he turned the dial a hair. The timer had been set by his grandmother, yet the mixture’s thickness still refused to aggregate quickly. “Nearly there,” she said, her voice threading between kettle pops and the light oscillate of lids vibrating on empty jars.
A sudden gust rattled the cracked window; the recipe card flipped, slapped the sill, and skated across the jars. Card edge struck one loose lid, the metal rang bright, slid, and nudged the nearest jar, which chimed and rolled a finger’s width toward the spill zone mat. Kit’s elbow knocked the resting spoon; its clink added a higher note to the brief cascade. If the bubbles rise again, he will nudge the heat lower, he thought, adjusting grip and lengthening each stir so foam stayed inside the rim. He tested once more, holding the plate beneath the extractor’s cool draft; this time the drop wrinkled but still crept. He angled the spoon flatter, drawing a wider arc that skimmed the kettle wall, the motion slower yet steadier than before. Another breeze rocked the lids, though his palm pinned the leading jar. Fingers hugged the warm glass while the freed lid spun across stainless steel, and Kit stood with one knee bent, the jar’s faint tremor travelling into his braced wrist, as the lid kept circling toward the drainboard.
