On contact, a hidden float inside shifted, and a slim wooden arm swung downward with a soft click that locked the cradle one notch lower. Paul stood beside her, noticing that every barrel in the low vault obeyed the same silent hierarchy of weight and balance. Yet nothing on the staves hinted at the mechanism; the action revealed itself only when the juice moved. The oak smelled new-cut near the tapped edges, while deeper strips felt seasoned and cool against her wrist. Between drips from the ceiling, the cellar exhaled a damp sweetness that settled over their shoulders like linen left in shade.
Gemma leaned forward and slipped a narrow muslin pouch of crushed quince into the open throat of the barrel, letting it sink until the string grew slack. Paul added a second pouch, then a third, each one vanishing without ripple, as though the liquid could absorb offerings forever. They waited, breathing the cool air, but the surface remained calm, denying them any immediate validation that the mixture thickened below. Gemma tapped the rim with a wooden mallet—soft resistance met the blow, no different from before—and her knuckles paused mid-strike, the mallet hovering above the rim. A polished pebble rolled free from her pocket, clinking once on the packed earth, and the tiny sound filled the vault before falling silent.
She retrieved the pebble and, on impulse, dropped it into the aperture where the pouches had disappeared. She glanced at Paul; he had already dipped two fingers into the foam and lifted them, watching strands mend themselves into a thin skin. Neither spoke, but they both stepped back, their knees brushing the cool staves as the barrel settled lower than any before it.
The bloom dimmed, leaving the surface opaque and speckled with tiny bubbles that released a hopeful hiss each time they broke. Gemma lifted the same brass pipette she had handled at the start, yet the tube now met thicker resistance and came away coated in pale film. She wiped the nozzle against the muslin cloth, exactly as before, but the cloth darkened instantly and carried the new sharp aroma toward the stair. Above, the single bulb flickered, its yellow band now mirrored in the cloudy surface, as though the cellar itself had grown more awake.
