Both palms pressed the rind of a half-aged wheel, and a practiced twist lifted the cheese, rolled it once, and set it down again so the faint grid on its underside might breathe. Younger wheels at the initiation stage waited closer to the stairs, their pale faces still springy; older wheels near the rear looked darker, firmer, and more withdrawn into their own silence. A small ceramic urn of coarse salt balanced on a ledge above, its rounded belly reflecting the bulb like a moon caught indoors.
The brush in Sam’s hand hovered above the rind, bristles just shy of contact, when a voice rose through the stairwell: "Sam, could you lend a moment?" The wheel he had lifted earlier wore a drier crust where salt dust—from the urn, now tipped enough to spill a spoonful—had drifted across its flank while he was gone. He circled the cheese and, without thinking, traced the same cupping motion he often used in the pantry to tighten jar lids; memory slipped from one material to another before his mind recognized the transfer. The touch sounded a brighter, more hollow note than before, as if the paste inside had just crossed a threshold.
