The copper kettle was already bright with steam, but the plate on the counter lay dry and cold. Gwen steadied a long spoon across the rim while her father Trent—better known in the neighbourhood as a careful landscaper—watched the gas dial. He had placed a trowel on the window ledge after repotting mint earlier, and its metal face now caught a thin band of glare that bounced off the bubbling fruit. At first the mixture moved lazily, each bubble lifting and folding back as if in slow meditation. Sugar shimmered at the surface, then slipped below, helping the colour transform from clear ruby to a thicker, darker shade. Six spotless jars waited on a cloth, their lids tilted like eager listeners.
A sudden doorbell rang down the hall. Trent wiped his palms on a towel and walked off to greet whoever had arrived. The clock hands climbed. Gwen slid the chilled plate beside the kettle, then arranged the empty jars to gather around the funnel for quick filling. When she tested a drop, a faint skin formed after only twenty seconds. The next minute the jam rose higher, foam threatening to kiss the rim. Heat from the stove remained steady, yet time thinned; every swirl grew heavier, and the jam clung to the spoon in thicker ribbons. She glanced at the row of jars and traced a quick plan with her index finger: three would do; the rest could wait for the next batch.
Trent returned just as Gwen eased the first ladle through the funnel. The stream moved slowly, glass warming without a single crack. She filled one jar, then a second, and finally a third before the kettle syrup resisted pouring and began to slip into stiff folds. They turned the flame low. The remaining fruit would cool inside the pot, perhaps perfect for scones but no longer fit for canning. Gwen wiped stray drops from the rims, pressed the lids down, and the faint hiss of settling sugar carried across the bright tile floor.
