Sugar at the Boil's Edge-

English 原文
Only three warm jars remained on the prep counter, the long row that had filled the tiles now interrupted by bare grout. Steam from the copper kettle hovered beneath the light, turning the hanging spoon into a shimmering silhouette. A marmalade-coloured cat crouched on the windowsill, eyes narrowed against the glare that bounced from the bubbling surface. Beside the cat, York’s forgotten plastic telescope rolled gently, stopped only by a small spiral fossil kept there as a paperweight. Fleur dipped a long wooden spoon, then lifted a ruby drop onto a chilled plate set in the window’s shadow. The drop spread quickly, shining like wet glass, showing the mixture still too thin for filling.
She returned the spoon and tried to hold steady the slow stir, watching darker swirls appear where shadows crossed the surface. Ivan had been timing the boil. Each minute under the harsh burner glare let more steam climb the wall and blur the thermometer. If the foam rose any higher, it would spill over the rim and stain the tiles beyond the drip tray. Fleur repeated the test, this time waiting ten slow counts before moving the plate from the dim freezer corner. The drop still crawled like syrup, so she angled the spoon deeper, lifting thicker ribbons that gleamed under the ceiling light. An unseen draft nudged the telescope; its tube rolled, nudged the fossil, and both struck the sugar bag resting near the board. Crystals slid from a torn seam, dropping through the bright column of steam and landing beside the kettle’s rolling surface. Sugar scattered into the jam, and the ruby liquid foamed taller, a mysterious surge that pushed white bubbles toward the burner’s shadow.
Ivan twisted the dial lower, and the glare under the kettle dimmed, slowing the rise of foam before it reached the rim. Fleur grasped the funnel, held it steady, and ladled the thickening mixture, watching light flicker along the glass as each jar filled. Extra sugar had accidentally been stirred into the pot earlier, unnoticed beneath the glare and the drifting steam. That minor slip now hurried the set, revealing how small changes could shift the whole reservoir. One drop flung during the surge clung to the fossil’s coarse edge, and a line of jam inched downward toward the sink.
