Five salt shakers stood on the bar counter, their clear sides ridged and cool, yet the middle one faced backward. Ian brushed each glass in turn; his finger paused at the single outlier, lingering on its cooler surface. Beside the row, a slim vase with mint leaves trembled whenever the coffee machine puffed hot steam against the tiled wall. A pair of heavy kitchen shears lay nearby, their joint sticky from lime pulp, reflecting pendant light across dull steel. Paloma turned the smooth dessert menu; laminated pages lifted with a faint peel and settled again. “The coffee smells strong tonight,” she murmured. Yvette slid a foamy drink toward its waiting recipient and vanished through the swinging door before the heat burst reached the bar. Ian clutched the backward shaker; its metal cap stayed stubbornly still, resisting every small tug.

He had already tried twisting bare-handed, so he folded a dry bar napkin and wrapped it tight around the lid. The cloth felt rough against his thumbs, yet the shaker rotated less than a grain’s width before locking again. Not giving up, Ian soaked a second napkin, draped it over the first, and squeezed harder, hands like a magician hiding cards. The damp layer thickened the grip, but the bundle slid, and the glass sheared sideways, clinking against its neighbours. Searching nearby, he found the elastic that had been pressed around a packet by the citrus cutter and stretched it over everything. When he pulled this time, the wobbling stack pushed the mint vase perilously close to the counter edge.

Ian paused, peeled the soggy napkin free, and kept only the dry cloth with the band. With the bundle now thinner, warmth from his palms spread through the metal, and the dried crust cracked like brittle bark. The cap finally turned, and a crisp crunch at last marked the seal breaking apart. Brown sugar crystals poured out, showing the shaker had never contained salt, which explained its different alignment in the row. He reversed the glass so every lid now pointed forward and slid the escaped crystals into a neat mound with one fingertip.

A sticky semicircle of sugar still clung on the steel beneath the line of shakers.

他先徒手試過，接著把一張乾吧巾對折緊緊包住蓋子。粗糙布料磨著拇指，但罐子只動了一粒鹽的距離就再度卡死。伊恩不認輸，又把第二張吧巾沾濕，蓋在第一張上，更用力擰緊，雙手像魔術師藏牌那樣張開。濕布增加了厚度，可整團布滑動，玻璃罐側向剪切，與鄰罐相碰叮噹作響。他往旁邊一找，撿到先前被柑橘切割器套住的小橡皮圈，拉開它套住整包布。這回他一扭，搖晃的布團把薄荷花瓶推到吧台邊緣。

伊恩停了一下，把濕吧巾撕掉，只留下乾布和橡皮圈。包層變薄後，掌心的熱度傳進金屬，乾硬的結塊像脆皮一樣碎裂。終於，蓋子轉開，喀啦一聲清脆地解除了封鎖。褐色砂糖灑了出來，原來罐裡根本不是鹽，難怪它方向不同。伊恩把罐子翻正，讓所有蓋子都朝前，然後用指尖把散落的砂糖推成一座小丘。
