"Pearls are low," Lily noted.
Water hissed around the ladle as she drew it through the pot; the dark spheres drifted apart like stones along a shallow riverbed. A gentle drone rose from the tea dispensers, while somewhere behind the glass partition the shaker threw a metallic rattle against its rubber mat. Two orders waited: the first cup already held oolong and milk, the clear tea turning opaque before the swirl could fully vanish; the second cup rested empty, ice cubes chiming whenever the countertop fan rippled an order slip. Lily’s commitment for the afternoon sat between those cups—finish both before the pearls stiffened—yet the sealing machine across the narrow space demanded exact timing, three slow seconds of lever pressure that tolerated no hurry.
She carried the first cup to the machine; plastic film crinkled as it fed forward and the heater let out a sharp sizzle. Lily pressed the lever and counted with the rhythm of the faint hum under the counter, holding until the third heartbeat passed. During that pause the ladle, left on the steel rim of the pearl pot, slipped cool air between metal and starch; when she returned, a dull tap sounded as the pearls settled, their surface no longer shiny. The hesitation had saved the seal, but it had cooled the topping. Remembering her grandmother’s timeless wisdom about patience, Lily dipped the ladle halfway back into the bath, swirling it gently so warmer water whispered against the sides; only some softness returned, and a few pearls kept a faint squeak when they brushed the spoon.
She tipped those half-recovered pearls into the second cup, added tea, and gave the mixture one brisk shake that mixed syrup and ice before sealing it as well. The first cup now carried a perfect rim with a tiny ridge where the film met twice, and the second offered pearls that bounced once before giving way. Later she might reflect upon that small trade, but for now a single, slow drip from the reheated ladle echoed beneath the counter.
