The cardboard take-out box echoed a faint tap, yet the surface under Sam’s palm felt damp and slick, as though the bar counter had traded its usual grain for glass. Espresso makers hissed at his elbow, spoons chimed in sharp bursts, and the swing door behind him thudded with every return. He had already folded two napkins into neat cushions; that cushioning material now muffled the clink of a lemon tart the chef had dusted with violet sugar. A spun-sugar bird with bright plumage crowned the tart, trembling whenever ice cracked inside a shaker. Sam pressed the soft walls of the box together, trying to persuade the square lid to clasp, yet the slippery counter let the box drift sideways. He steadied it, knowing any small jolt could bring about a sugary collapse.

A sudden rattle from the receipt printer snapped his grip. Coins rang into a jar while the cashier waved a narrow slip toward him. Sam stepped away; the printer’s chatter followed him to the register. Pens clicked, the drawer thumped, and the bell above the till chimed once. When he turned back, a fresh blast from the coffee steamer had laid a cool mist across the counter. The carton now glided on the moisture, the napkins had soaked through, and the sugar bird’s delicate plumage drooped, tiny shards pinging against cardboard. The once-crisp lid sagged where steam had softened its crease.

Sam slid a wooden stir stick under the lid ridge, levering it upward like a tiny beam. The tool lifted the softened edge without touching the tart, and a straw from the caddy propped the bird upright again. He swapped the wet napkins for drier ones, folding them twice for extra thickness before easing them beneath the dessert. At last the lid folded over the stir stick, holding firm without another sound from the fragile cargo. Sam exhaled, pushed his stool back, and left a thin violet streak on the counter beside the unused stir stick.
