Three faint soot rings had formed around the vent dial before Greer tightened the small steel cylinder by a quarter turn. Earlier, the family had measured equal scoops of maple sugar and white sugar with a long spoon, hoping the blend would yield a steady amber glow. Greer watched the pale ribbon that slipped from the vent; its colour looked thin, so with a fearless stride she lifted the spoon again, added a half-measure more maple, and slid the pan back under the rack. Light from the open side of the shed caught the smoke, throwing a moving shadow-edge across the tabletop, yet the timer beside the box kept its even tick.

Halfway through the session a cooler breeze slipped behind the shed and sent the smoke stream sideways, confusing the visual cue Greer relied on. She fetched an empty barrel from the corner and rolled it against the opening; the metal shell blocked the draft, but it also deepened the interior heat. The smoke thickened to a darker glare almost at once, warning of over-colouring. Greer’s glove, its green thumb still stained by morning herb picking, pressed the dial back a click, letting a brighter shaft escape and slowing the hidden caramelising. “Smoke looks heavier now,” Harris noted, wiping his glasses. The lid stayed closed until the timer buzzed; then Harris lifted it and placed the tofu on the board. Inside each piece a neat transition band showed dark outside, pale centre—exactly the layered effect the workshop had promised. Greer laid the measuring spoon flat on the sugar tray. The timer wheel continued turning beside it.
