Flour slipped from Liora’s cupped palm into the open jar while Winston anchored the glass against the wood counter. The pale dust landed, vanished, and the surface below kept its flat calm. She tipped another spoonful; again the thick beige mass swallowed the gift without a ripple, then settled, heavier, as if a small ballast had joined its weight. Between spoonfuls, soft morning light pressed against their shoulders, outlining the slow arch of Liora’s wrist. A sour tang hung low, restrained until each stir cut it loose for a breath. The dough mound nearby lifted under its cloth like a sleeping creature. Each rise sank back, holding shape only because the gluten began to solidify inside its warm shell.
Round after round, more flour arrived. The jar accepted each offering, and nothing changed: no swell, no hiss, nothing to confirm the hidden life chewing through the sugars. Liora spoke once: “Still quiet.” Winston responded with a nod, then fetched another scoop from a sack marked by the rough weave a local farmer had sewn shut with twine. The sack sagged, its mass tugging his elbow earthward. He poured; the culture absorbed. A wooden pick tapped the rim, knocking loose a ring of dried paste, yet even that ring slid downward and disappeared. Patience stretched; the room’s sounds shrank to the soft drag of metal spoons against ceramic bowls and the dull tap of feet adjusting grip on the tiled floor.
The next scant spoon found resistance. A bubble shouldered upward, crowned the surface, and burst, leaving a round crater that refused to fill. Liora froze mid-pour, flour dusting her knuckles, gaze locked on the sudden hollow. Another pulse followed; froth surged, climbed the inner wall, and lapped over. Winston jerked the jar away from the counter edge, the unexpected heft sloshing toward one side and tilting his stance. Sticky foam threaded over his thumb before retreating, threads snapping back like elastic bands in reverse. Air long stored beneath the calm surged upward; its space had vanished. The room, quiet moments earlier, now clicked as gas pockets popped inside the nearby loaf, a mirrored chorus answering the jar.
Winston set the jar inside a shallow bowl and wiped his thumb on a towel; Liora lowered the spoon, letting it rest across the scale’s pan. Neither spoke. The loaf in the oven cracked again, a designer pattern of lines they had scored with that same wooden pick shifting as crust tightened. Outside the glass door, steam drifted upward while colour darkened from pale clay to bronze. She stepped back, arms loose, weight balanced through both heels, and watched the starter continue its slow overflow. The bowl’s rim collected a glistening collar, thicker with each silent pulse, until gravity coaxed it downward in a single glossy ribbon. On the rack, the cooling bread answered with faint clicks, one after another.
